When Stephen Cipes first started production, he had a personal conviction about keeping toxic agricultural chemicals away from his family and his business, and so he started the process to convert the property to organic certification. At the time, organic agriculture wasn’t nearly as en vogue as it is today, and he encountered resistance from staff and other critics who didn’t view organic production as a feasible option, much less a lucrative one.
In 2008, Summerhill, which gets 80 percent of its grapes from organic vineyards, became the first winery in British Columbia to achieve organic certification for the winery. Summerhill also achieved biodynamic certification in 2012.

Felipe has worked in Chile for several top wineries including Santa Helena, De Martino, Miravalle, and William Fevre in the Maipo. He has also worked in the US at La Crema in Sonoma Valley. It was at William Fevre that Felipe fell in love with the vineyards in the Andes mountains and the distinctive wines that this rugged and extreme terroir can produce.
At Andes Plateau, their vineyards are mostly Cabernet and Chardonnay (they have some Syrah, Cabernet Franc, and Merlot also) grown IN the Andes mountains. The beginning point is above 500 meters (the foothills of the Andes) hence the line of wines named Cota 500, but they also work even higher with a line called Cota 700. The benefits of the mountains are very cool nights and fresh winds that keep the plants healthy and slow the ripening process resulting in wines with good intensity but also freshness and balance.
Beyond these spectacular terroirs, they approach the winemaking with some basic rules – no cultivated yeasts, no acidification, and only a very small dose of sulfur before bottling. The wines often age in 3,000 liter old French foudres which ultimately provide shape and texture to the wines rather than a strong oak influence.

The un-grafted vines (some dating back 100 years) grow at an altitude of 230-250m above sea level and they specialize in unique indigenous varieties such as Piedirosso and Caprettone.
Founded in 1996 by the Palomba and Monaco families, Bosco de’Medici Winery is steeped in history and tradition. The winery’s name derives from a boundary stone marked with the Medici family crest, discovered in the vineyard. The Palomba and Monaco families have continued the legacy of cultivating high-quality grapes on the slopes of Mt. Vesuvius, producing wines that reflect the unique volcanic terroir. They have vines spread across 8 parcels in the provinces of Reggio Emilia and Modena and the process of organic certification has started. Only indigenous yeasts are used for the primary fermentation and these are no ordinary Lambruscos! The family strives for as minimal environmental impact as possible and produces a range of super gastronomic wines from their wonderful verdant vineyards.

Attis in Greek mythology was a handsome young man, chosen by the goddess Cibeles to care for her religious cult in exchange for swearing chastity and celibacy forever. However, Attis fell madly in love with a nymph named Sangarida and broke his oath.
Cibeles punished Sangarida by killing the tree in where she lived, killing her and this drove Attis mad who also killed himself. Cibeles resurrected Attis by turning him into a pine tree as a symbol of great mother nature and Sangarida was resurrected as wine.

Their vineyards have a unique microclimate and three different soil types: granite sand, clay and shale.
For centuries, it has belonged to different ecclesiastical orders. It was not until the middle of the 19th century, with the confiscation of Madoz, that it was passed on to a private owner, leaving it distributed among different wineries and small winegrowers.

The name Emendis comes from the first resident of the masía, a woman who according to historical records founded the estate around 1186. The masía is in fact still owned by a woman, Anna Valles, who works with her husband Jordi and the rest of the family to make wines and cavas in the Penedès.
The vineyard consists of 48 hectares of clayey soil, low in organic material and chalk but with a high magnesium content which brings the acidity necessary to maintain the fresh taste of the cavas. Emendis is practicing integrated agriculture, respecting and coexisting with the natural flora and fauna in the vineyards.

Martinez Alesanco is a truly original bodega producing tasty, characterful wines for seven generations. They all estate Fruit, all of which come from their home village of Badarán, one of the coldest zones of Rioja Alta.
The bodega is spearheading a new generation of wines with the new local Maturana Tinta lending its distinctive personality. “Mazuelo and Graciano do not adapt well to our area and the discovery of Maturana, with Professor Fernando Martínez de Toda in 2004, was a real boost for our wines,” says Pilar Torrecilla, “while Tempranillo is very well adapted to our cool area.”

In the Quietud vineyards, All of the vineyards are planted to gobelet-trained bush vines and dry farmed. The oldest vines were planted between 1960 and 1988, with more recent plantings in 2000 and 2004. Horses are used instead of tractors for vineyard work in the winter and spring, and farming is certified organic. In the cellar, all fermentations occur spontaneously with native yeast and no added sulfur. Wines are aged in stainless steel tanks as well as French and American oak, with a restrained percentage of new oak.

The vineyards are small terraced plots in the Sierra de las Cabras. A completely natural setting surrounded by unsullied Mediterranean fauna and vegetation in its wildest state. The estate consists of around 500 hectares of bush that are only accessible by four-wheel drive vehicles or on horseback.
The Monastrell and Garnacha vineyards are high-altitude, since the estate is located between 780m and 1200m above sea level. The arid climates of the location subject the vines to extraordinary stress, resulting in a unique expression of these fruits and their wines.
The estate also has a set of hidden caves, including La Cueva Negra. This archaeological and anthropological site is approximately one million years old, dating back to the end of the Early or Early Pleistocene. Here we find a cave with remains of human beings (Homo Heidelbergensis), Paleolithic tools and fauna. Its interior houses two highly significant finds: the oldest European hand axe and the first presence of man-made fire outside of Africa.
